Make Nabeedh With Me… Nabeedh/Nabeez/Nabidh is a health drink, native to the Arabian peninsula. It’s known as a ‘Sunnah’ in Islam, which means it’s something the Prophet Muhammad (PBUH) did and enjoyed. It is said to have been his favourite drink. It has many health benefits such as naturally boosting energy, aiding digestion and helping to reduce stomach acid and gout. It’s very simple to make and perfect for Ramadan! RECIPE INGREDIENTS - 5-7 dates (I used Ajwa, but any dates will do!) - Water (I used Zam Zam water for a ‘Super Sunnah’ but you can use any water, I would recommend filtered if possible) METHOD 1. Half and de-stone your dates 2. Put dates and stones into a cup or jug 3. Cover your dates with water - you want enough water in there to make the amount of Nabeedh you need, so bare this in mind 4. Cover the jug over and pop into the fridge over night (12-24 hours) 5. Stir your mixture and serve (you can strain it if you don’t like bits but the bits are that fine you can’t feel them) - You can either eat the left over dates, dispose of them or cover them over one more time as above for a second batch of Nabeedh. It will be weaker in taste and colour. Some people may prefer this. IMPORTANT: After 48 hours the dates/mixture begins the natural process of becoming alcohol. So it is not allowed for Muslims to consume it. So please be aware and if it doubt, throw it out! Make Thareed With Me… This is a bread soup/stew that originates from Mecca (Makkah) Saudi Arabia. It’s over 1400 years old and was our Prophet Muhammad’s favourite meal. Making it a ‘Sunnah’ dish. Perfect during Ramadan for Iftar, or for a family dinner in general. I hope you enjoy it as much as I have… RECIPE Ingredients 500g lamb shoulder or beef - you can leave bones in if you wish (this is lamb shoulder from @malikbutchers it was delicious) 2-3 Tbsps ghee (or oil) 3 garlic cloves minced 2 tbsp tomato puree (or chopped tomatoes) 1 large onion Butternut squash (I used half) 1 bell pepper chopped 2-3 peeled potatoes All spice (to taste) 7 cardamom pods (crushed so they’re slightly open) Salt to taste Pepper to taste 1 cinnamon stick 1 bay leaf Unleavened bread (I used wholemeal pitta) 1 litre of water (I’d recommend using filtered if possible) Other veggies: This recipe is often made with other veggies like carrots and courgettes too! So customise to your taste and what’s in your fridge. Other spices: you could also add turmeric, coriander and cumin to taste METHOD 1. Chop all veggies up 2. Wash your meat and set it to the side 3. Heat your ghee in a deep pot on medium heat 4. Add chopped onion and saute until golden 5. Add meat and brown on all sides 6. Add garlic, all spice, salt, pepper, cinnamon stick and bay leaf and mix well 7. Add tomatoes or puree, stir and cook for 2-3 minutes 8. Pour in 1litre of water (or more depending on size of pan) stir and bring to the boil 9. Reduce the heat to low, cover and simmer for 45-60 mins (or until the meat is tender) 10. Add chopped veggies & potatoes 11. Simmer for another 20-30 mins or until the veggies are soft Preparing the bread: 12. Tear the bread into pieces and place in a large serving dish or deep bowl 13. Once stew is read, pour the broth over the bread and let it soak in… Your Thareed is read to serve! Halal Toad In The Hole… This is a very popular British Classic… easy to make, heart warming and delicious! RECIPE Ingredients 6-8 halal sausages (I used to Richmond meat free fresh sausages) 150g (1 cup) of plain flavour 2 medium eggs 200-250ml of water (start with 200ml and adjust if needed) 2-3 tablespoons sunflower oil Salt 1 teaspoon dried thyme Pinch of black pepper You’ll need: A mixing bowl Whisk or a fork Roasting tin or ovenproof dish METHOD: 1. Preheat the oven to 220 degrees / 425 F 2. Pop 2 tablespoons of sunflower oil into your roasting dish or tin and place into the hot oven for 5 mins to heat the oil 3. In a mixing bowl; whisk the plain flour, eggs, salt, dried thyme and black pepper 4. Gradually add in 200ml of water and whisk it constantly until you get a smooth batter. You want to aim for a consistency similar to pouring cream. If it seems too thick - add upto 50ml of water 5. Take the roasting tin out of the oven 6. Pop your sausages into the tin and roll them to coat in the hot oil (be careful!) 7. Pop the tin back into the oven for 5 mins to brown the sausages 8. Remove the tin from the oven and pour the batter around the sausages (make sure there’s space between the sausages) 9. Pop the tin back into the oven and bake for 25-30 mins - or until the batter has risen and golden brown. Don’t open the door if you can or avoid doing it too much as this can deflate the batter! 10. While baking cook your veggies and make your gravy, I kept it simple with an onion gravy and tender stem broccoli 11. Once batter has risen and is nicely golden brown, remove from oven, cut and serve with veggies and gravy. - This also goes lovely with mash potato too! It’s down to personal choice.
