Big Mac loaded potato gems 🍔 Ingredients: Potato gems Beef mince Seasonings of choice Shredded cheese Sauce (this is just an estimate as I didn’t measure anything!) 1/4 cup kewpie mayo 1 1/2 tbsp tomato sauce 1tbsp chopped pickles 1tbsp chopped brown onion 1tsp Dijon mustard Splash of pickle juice Toppings: Shredded lettuce Chopped pickles Chopped brown onion Method: 1. Cook potato gems in the oven or air fryer at 200°C for 15-20mins until golden and crispy. 2. Cook beef mince in a pan with seasonings. 3. Mix sauce ingredients in a bowl. 4. Top cooked potato gems with beef mince and shredded cheese. Place back into the oven until cheese melts. 5. Avocado and corn salsa with honey mustard chicken and rice 🥑 Avocado and corn salsa: 250g corn 1 avocado, diced 1/2 red onion, diced 1/2 a punnet cherry tomatoes, diced coriander, finely chopped Dressing: juice of 1 lime Drizzle of olive oil pinch of flaky sea salt Chicken: 2 chicken breasts 2tbsp honey 2tbsp dijon mustard 1tbsp olive oil Minced garlic Salt and pepper — let marinate for a couple of hours then pan fry or bake. potato gem nachos 🤤✨ Ingredients: 1 brown onion 1tbsp minced garlic Beef mince Mexican seasoning Potato gems Shredded cheese Cherry tomatoes Avocado Greek yoghurt Coriander Method: 1. Cook potato gems in the oven for 20 minutes or until golden. 2. Diced onion and add to a pan with the garlic. Cook until onion has browned. Add the mince and taco seasoning and cook. 3. Once potato gems are cooked, add the mince on top along with some cheese. Place back in the oven until the cheese has melted. 4. Top with tomato, avocado, Greek yoghurt and coriander. teriyaki chicken sushi bowls 🤤 Ingredients: 4 chicken thighs Teriyaki marinade 2 cups cooked rice 2tbsp sushi seasoning Edamame beans Cucumber Carrot Avocado Kewpie mayo Sesame seeds 1. Marinate your chicken and pan fry. 2. Cook rice (I just used the microwaveable packets) and mix through the sushi seasoning. 3. Add all the ingredients into containers 4. salted caramel oatmeal cookies 🍪 #ingredients 1 egg 3/4 cup brown sugar 1/2 cup butter melted 1 cup rolled oats 1 cup plain flour Pinch of salt 1/2 tsp bicarb soda 120 g salted caramel chocolate, roughly chopped #method 1. In a bowl, mix together the egg, brown sugar and melted butter until combined. 2. Stir in the rolled oats, plain flour, salt and bicarbonate of soda until a dough forms. 3. Gently fold in the salted caramel chocolate chunks. Scoop heaped tablespoons of dough onto the prepared tray and press down slightly. 4. Space them a few centimetres apart as they will spread slightly. 5. Bake for 10–12 minutes at 180°c or until the edges are golden – they’ll firm up more as they cool. Top with a pinch of salt.
