Chicken, Leek & Mushroom Pot Pie! 🥧 Perfect for the colder season 🫶🏼✨ Ingredients: 3 Garlic Cloves Minced 1.5 - 2 Onion Chopped 3tbsp Oil / Butter 1tbsp Salt Splash of Water 2 Whole Leeks Sliced Seasonings: 1tsp Cajun 1tsp Cumin 1tsp Oregano 0.5tsp Thyme 0.5tsp Rosemary 0.5tsp Garam Masala 1tsp Salt 1tsp Pepper Pinch of Nutmeg Filling: 2 Chicken Breasts 200g Chestnut Mushrooms 1-2tbsp Sour Cream (or Creme Fraiche) 100ml Double Cream 100g Cheddar (Cream cheese / Boursin is optional) Mash: 3 Large Baking Potatoes peeled and cut into quarters 2/3tbsp Butter 1tsp Salt 0.5tsp Pepper 1tsp Garlic Powder Splash of Milk Recipe: - In a pan, with butter, sautee the minced garlic until browned for a couple of mins - Add your onions and caramelise for 10mins at medium - high heat, keep stirring do not burn the edges! Add splashes of water to prevent burning - Add your leeks and keep reducing the base for 20 minutes minimum (this brings depth & texture to the base!) - In the meantime, prep, cut, wash chicken breast, cut into small cubes - Add your chicken and cook for 5 mins - Add flour and your seasonings and cook for 5-7 mins to get rid of the raw taste - Chop your mushrooms, add a bay leaf, and half a stock cube in 200ml of hot water - Simmer this for 5mins or more - Preheat the oven at 180C - Add your cream and cheeses of choice. Taste as you go along. And simmer for minimum 20mins - Start prepping for mash. Peel & cut and boil your potatoes. Keep an eye until it’s just about soft, (prevent over boiling! - Fill the pie dishes and top with puff pastry (Egg, milk, oil, butter, brush thin layer) - Bake at 180-190C 40mins (or until it’s golden brown) Or bake at 200C for 20 mins - Drain your potatoes, in the pot, add your ingredients and mash with a masher for a smooth creamy texture - On a pot of boiling water, add a colander, top with your veg of choice and place a let.
