Ok this is actually DELISH!!! You’ve gotta try it! Cheeseburger Soup: * 1 pound ground beef * ¾ cups onion chopped * ¾ cups Carrots shredded * ¾ cups celery diced * 1 small zucchini diced (optional) * 1 jalapeño (optional) * 2 teaspoons dried basil * 2 cloves garlic * 4 tablespoons butter divided * 3 cups chicken broth * 4 cups peeled potatoes diced * ¼ cups all-purpose flour * 12 ounces Velveeta cut into cubes * 1½ cups milk * ¾ teaspoon salt * ¼ teaspoon black pepper In a large pot Brown ground beef. Meanwhile chop the onion, carrots, celery, zucchini, pepper, basil and garlic. Drain grease from ground beef and set aside. In the same pot, sauté veggies in 1 tbsp of butter until soft and fragrant. Add chicken broth, drained beef, and potatoes. Bring to a boil and then lower heat and cover to simmer for 10 minutes. In a small sauce pan melt remaining 3 tablespoons of butter over medium heat and wisk in 1/4 cup flour. Allow to cook for 3-5 minutes. Add butter/flour mixture to soup and boil for 2 minutes and allow soup to thicken. Lower heat and add milk, cheese, salt and pepper. Stir occasionally while the cheese melts. If soup is too thick for your liking add an additional 1/2 cup broth or milk. Serve & enjoy! #Recipe #dinneridea
I’ve honestly felt like slave to my job the past couple of weeks. This is not a new feeling… I deal with this from time to time. We went from CMA fest to Wisconsin back to CMA fest then to Kentucky and then back home for two days that I have spent working. I leave today for 5 more days and I have felt so overwhelmed with a to do list that feels 10 miles long. Not only do I feel the pressure of my responsibilities with my career, but I feel the weight of normal day to day home tasks that need my attention like laundry, unpacking and repacking suitcases, checking in on friends & family, cooking a meal for my husband, and weeding my garden. There’s no way I can squeeze all of this in the two evenings I have at home. When I start to focus on the things I have to do instead of the things I want to do I get grumpy, overwhelmed, and ungrateful. This is when I am so thankful for the reminders of Philippians 4:6-8. I am in control of what I fix my mind upon. I have learned balance is not equal parts of everything our life consists of, but it is doing the right thing at the right time. Today I had 30 mins to harvest green beans. Do I have time to weed this garden? Absolutely not, so I am not going to let something I don’t have control over control my peace. Peace is not a fully checked off to do list or a routine schedule. Peace is the presence of God. He is with you whenever you are today. Just take it one step at a time 🤍 #storytime
