First time making pinakbet. One of my favorite Filipino vegetable dishes 🥗 like many local dishes there are so many renditions but this is how I like it & also based it on what I had at home ☺️
My secret to the most tender & flavorful adobo is making it in a pressure cooker 🍚🥘 here’s the recipe below: CHICKEN ADOBO 8 pieces of chicken (up to you which parts you prefer, I like drumsticks and breasts) 1-2 onions, chopped (yellow or red, wichever you have at home!) 1 whole garlic, chopped 2-3 bay leaves 1/4 cup white vinegar 1/3 cup soy sauce 1/4 cup brown sugar Black peppercorns Salt & pepper Olive oil Optional: Balsamic vinegar (I started adding this when I lived in Italy!) Directions: 1. Chop the onion and garlic. Season the chicken with salt and pepper. 2. If using a pressure cooker the like an Instant Pot, start with the sauté setting. You can either lightly cook the chicken first, then add the onion and garlic or start with the onion and garlic, then add everything else. Anyway it will all come together once pressure cooked 3. Add all other ingredients and mix well. 4. Switch to the pressure cooker setting and cook for at least 30 minutes. 5. Allow the pressure to release naturally and let it sit until ready to serve!
