Pierogi 🥟 Ingredients (dough): 250g plain flour 1/2 tsp salt 1 tbsp oil 125ml warm water Ingredients (filling): 250g maris piper potatoes 125g ricotta cheese 1/2 onion Salt Black pepper Ingredients (toppings): Bacon lardons Sour cream 1/2 onion Butter (for frying) ——— Method: 1. Add all of the dough ingredients into a mixing bowl. Mix until combined, then knead for 5-8 minutes until smooth and elastic. Cover with a bowl and leave to rest for 30 minutes. 2. Peel the potatoes, chop into chunks and boil for 15-20 minutes until fork tender. 3. Whilst the potatoes cook, dice an onion and fry in a little oil until golden brown. 4. Mash the potatoes, then add the ricotta cheese, half the onions, salt and black pepper. Mix until combined. 5. Fry the bacon lardons until golden and crispy. 6. Roll out the dough on a floured surface until it’s 2mm thick. Cut into circles around 8-10cm. Place 1 tbsp of the filling in each circle, fold it over to form a half moon shape, then crimp it shut using a fork. 7. Boil the pierogi in salted water for 2 minutes. Then fry them in butter until golden and crispy. Serve with sour cream, crispy bacon lardons and the remaining onions. Then enjoy, lovely! #pierogi #polishfood #DinnerIdeas #familymeals
